INGREDIENTS

1½ sticks of butter (softened, not melted)

16 oz of confectioners sugar
-
1½ cups of peanut butter
-
1 bag of chocolate chips (milk or dark)

½ large Hershey bar
-
2 tablespoons of coconut oil
This year, Valentine's Day falls on a Sunday which means you have an entire weekend to create a special meal to show your loved one just how much you care. While a lot of your attention may be paid to the main course, don't forget to finish it off with a delicious dessert. It doesn't have to be fancy, but it does have to be tasty. Lora Rees, our COO, has you covered with her famous Buckeye recipe.
DIRECTIONS:

Place the butter and peanut butter in a mixing bowl and use a hand mixer to combine.

Slowly add the confectioners sugar and continue to mix until all 3 ingredients are fully combined.

Use a spoon to scoop tablespoon sized portions and roll with the palms of your hand until the balls are smooth and round.

Place the peanut butter balls on a wax-paper lined cookie sheet and freeze for 15 to 20 minutes.

While the peanut butter balls are chilling, melt the chocolate chips, Hershey bar and coconut oil in a double boiler.

Remove the peanut butter balls from the freezer, skewer the top with a toothpick and use the toothpick to dip them into the melted chocolate mixture. Make sure to leave a small amount of the peanut butter balls exposed so they resemble a buckeye nut.

Place the coated peanut butter balls into the refrigerator to harden.

Before serving, allow the balls to slightly soften at room temperature.
BAKERS TIPS:
-
Do NOT try to measure sugar using volume, it has to be weight. If you want to keep it easy, just get an exact package of 16 oz as the mix of the butter/sugar/peanut butter is critical to the consistency of the ball. Too much sugar and it will be crumbly and won’t stay together, too little sugar and it will be too sticky and not hold the shape of a ball, plus you will get it all over your hands! Dipping in either case will be near impossible!

If the chocolate is too thick, adding a bit more coconut oil will thin it out and make it smoother. If chocolate is too thin, just add more chocolate!
